Mực vòng sau khi rã đông, rửa sạch lại rồi cho vào bát trộn, dùng khăn giấy thấm mực cho thật khô. Bạn cũng có thể sử dụng mực tươi rồi đem cắt rời thì càng ngon. Ướp mực với tỏi, ớt xào, tương đen, dầu hào và hạt tiêu. Bọc kín bát mực bằng màng bọc thực phẩm rồi đặt vào ngăn mát tủ lạnh trong khoảng 30 phút cho mực thấm.
Làm nóng chảo với 1 muỗng canh dầu olive, chờ dầu nóng thì trút bát mực đã được ướp kỹ vào đảo nhanh tay. Mực rất mau chín, bạn chỉ cần xào trong 2 phút là đủ, không nên kéo dài thời gian xào khiến mực bị dai, ra nước và kém ngon.
